Experience not to be repeated, total disappointment, if they don't change I strongly advise against it..
Lunch, Traditional Menu: platter of local cured meats and cheeses followed by pasta all'amatriciana finishing with grilled meat and side dishes all for €25 excluding drinks. Lunch starts half an hour later than expected, but it's okay...
the appetizer consisted of 1 slice of Milan-style salami, which is not typical of Tolfa, 1 small slice of decidedly non-local ham, 1 slice of red coppa di testa, typical of cured meats with nitrites and nitrates, not like those from Tolfa a strip of salted ricotta and one of caciotta which are not made in Tolfa, five or six olives and a forkful of peppers in oil.
The pasta all'amatriciana arrives... in three dishes we found two small pieces of something that must have looked like bacon, but from the pieces we could clearly feel that they were fresh and not seasoned like bacon, in short the first dish was pasta with sauce.
Accompanied by a musical group we spent the two and twenty hours between the first and second course, at 4.20pm the grilled meat arrived preceded by a side dish of iceberg salad (typical of Tolfa) very poorly seasoned and badly drained.
Very, very, small portions... of meat that didn't even have a local name despite the fact that in Tolfa there are butchers and shops that sell excellent local products.
The sausages had the typical flavor of supermarket products and if that wasn't enough, after two hours and twenty minutes they arrived all burnt, inedible, saving two slices of porchetta which hadn't been cooked by the kitchen because it was already ready, otherwise they would have burned that too.
There was no trace of traditional flavors...
It's a shame, really a shame... because the place deserves a higher quality level of cuisine, which, given this lunch, is doable with very little extra effort.

We had dinner in the cloister, beautiful atmosphere and exquisite food, excellent ingredients, cooked with care and passion
